This method will make a softer, more tender crust for your baked cheesecake.
Also, we’re doing a bottom-only cheesecake crust, we’re not going up the sides of the pan.Â

GRAHAM CRACKER CRUST
A quick and easy classic graham cracker cheesecake crust

Ingredients
- 1 pack plain graham crackers
- 1 stick unsalted butter, melted
- 2 tablespoons sugar (optional)
- 1 pinch of salt
Directions
- Step 1 Put the two piece 9″ cheesecake pan together
- Step 2 Grease it with Baker’s Joy
- Step 3 Lay a 9″ circle of parchment paper in the bottom of the pan
- Step 4 Baker’s Joy the paper
- Step 5 Crumb the grahams in a food processor, or put them in a gallon zip bag and crush with a rolling pin
- Step 6 Place in mixing bowl
- Step 7 Drizzle the butter slowly into the crumbs, mixing gently by hand
- Step 8 Combine only until the crumbs are moist, not soggy. If you don’t use all the melted butter that’s OK
- Step 9 Dump the graham crumbs into the cheesecake pan, spread around evenly by hand
- Step 10 Keep the crumbs on the bottom of the pan, don’t go up the sides
- Step 11 Working around the pan, and using the backs of your fingers, gently tamp down the crumbs
- Step 12 That’s it!
